The spiced Gujarati flatbread – also known as thepla – is a shelf-stable lunch or snack option to eat on its own or with a sweet mango pickle. Attempt to make this version that is packed with seeds and spices for a boost of nutrition.
2 cups whole wheat flour ¼ cup flax seeds ¼ cup pumpkin seeds 3 tablespoons chia seeds 1 teaspoon turmeric powder 1 teaspoon red chilli powder 2 teaspoons kasuri methi 1 teaspoon sesame seeds 2-3 tablespoons vegetable oil ½ teaspoon sugar 2 teaspoons ginger-chilli paste 1 teaspoon coriander powder Salt, to taste Water, for kneading
Toast the flax, pumpkin and chia seeds separately in a dry pan until aromatic.
Cool and grind to a fine powder before combining with the other ingredients to knead a dough as you would for chapatis.
Rest for 15-20 minutes before rolling out into thin discs and cooking on a hot tava for 2 minutes on each side.
Continue to repeat the process until you have enough and enjoy hot or at room temperature.
