3 beetroots, peeled and chopped 3-4 garlic cloves 2 onions, chopped 2 green chillies, chopped ¼ cup coriander leaves Salt, to taste Pepper, to taste 2 tbsp butter 3 cups vegetable broth 3 tbsp fresh cream Croutons, to garnish

Heat the butter in a large pot, then add the garlic, onion, green chillies and beetroots. Saute until the veggies turn brown.

Now add the coriander leaves, salt, pepper and the vegetable broth. Cook until the vegetables are soft.

Allow the soup base to cool completely, then blitz to get a smooth beetroot soup.

Reheat the beetroot soup, garnish with fresh cream and croutons and serve hot.
