Boondi Laddoo: Addictive Dessert Made With Besan

Boondi laddoo is an Indian sweet dish prepared from boondi snack or besan or chickpea flour pearls. Deep fried boondi pearls are soaked in a sugar syrup and shaped into round balls for this dish. Here's the recipe for Boondi Laddoo.

Ingredients

For boondi laddoo: 1 cup besan / gram flour 3 drops yellow food colour, optional ¼ cup + 3 tbsp water ¼ tsp baking soda, optional Oil for deep frying 1¼ cup sugar ½ cup water Other ingredients: 1 tbsp ghee / clarified butter 2 tbsp raisins / kishmish 2 tbsp cashew / kaju 5 cloves / lavang ¼ tsp cardamom powder / elachi powder

Step 1

Prepare boondi from the batter or use store bought boondi. In a large thick bottomed kadai, add sugar and water and mix well till it dissolves and allow to boil till you attain 1 string consistency. Once the sugar cools slightly, pour in the boondi.

Step 2

Roast raisins, cashew and cloves in ghee. Pour the roasted dry fruits over the boondi mixture along with cardamom powder. Mix well with the help of a spoon till the sugar syrup is absorbed.

Step 3

When the mixture is still lightly warm, prepare ladoo by rolling it into balls. Store them in an airtight container once cooled.
