A hearty sandwich stuffed with spiced potatoes, vegetables and cheese – the Bombay sandwich is a quintessential staple for when hunger pangs strike in the middle of the day. Enjoy it toasted or grilled with lots of butter, accompanied by chutneys on the side.
2 boiled potatoes 1 teaspoon red chilli powder 1 teaspoon turmeric powder 1 teaspoon mustard seeds 2 green chillies, chopped 1 tablespoon chopped coriander 1 teaspoon chaat masala 1 teaspoon garam masala Salt, to taste
2 slices white bread 1 tablespoon butter 1-2 tablespoons green chutney 4 slices cucumber 2 slices tomato 3 slices onion ¼ cup potato filling 1 slice cheese 1 teaspoon chaat masala Salt, for seasoning Chutney, for serving
Crush the boiled potatoes using your hands and add in the spice powders, chillies and salt.
Mix well to combine and set aside while you butter the slices of bread.
Spread the green chutney evenly on the buttered side and add the potato mixture.
Layer the vegetables on top of the potato mixture, seasoning each one as you go with salt and chaat masala.
Place the cheese slice on top before closing the sandwich and toasting it in butter until golden-brown and crisp. Slice and serve hot with chutneys.
