Bombay Frankie Roll: An Easy Lunch Or Tea Time Snack

Make a spicy and chatpata roll inspired by the popular Bombay street food – frankie. This versatile recipe is perfect to add fillings of your choice and even use up leftover sabzi lying in the fridge.

INGREDIENTS

2 leftover rotis 2 eggs ½ onion, sliced 2 green chillies, chopped ¼ cup potato sabzi 1 tablespoon schezwan sauce 1 teaspoon chaat masala 2 teaspoons oil Juice of ½ lemon 1 cheese cube 1 pinch salt

METHOD

Warm up the roti on one side while you whisk an egg with some salt.

METHOD

Remove the roti off the pan with a spatula and pour the egg before placing it back on top.

METHOD

Allow the egg to cook and settle before turning it over and adding the potato sabzi.

METHOD

Grease the surface of the pan to allow the roti to crisp up while you add the schezwan sauce, chaat masala, sliced onions, lemon juice and grate some cheese on top.

METHOD

Fold the frankie over using both sides of the roti and cut into half. Serve hot.
