Traditionally cooked during winters by the Dawoodi Bohra community of India, Mutton Khurdi is a simple yet sublime soup perfect for chilly evenings. Here is the easy recipe you can make at home.
250g mutton, with bone 1 onion, sliced ½ tsp cumin seeds ½ tsp black peppercorns 1 cinnamon stick 1 bay leaf 1 tbsp ginger-garlic paste ½ tsp green chilli paste 2 tbsp flour 1 cup milk 1 litre water Salt, to taste 4 tbsp oil ½ cup mint leaves

Heat oil in a pressure cooker, then add cumin, peppercorns, cinnamon and bay leaf.
Once these stop spluttering, add onions, ginger garlic paste and mutton pieces. Saute for 10 minutes.
Now add the green chilli paste and flour, and mix well until the raw smell of flour dissipates.
Add the milk, water, salt to taste and half the mint leaves. Mix well then pressure cook for 4 whistles.
Serve the flavourful Mutton Khurdi soup with more mint leaves on top and enjoy.
