Til pitha is a symbol of the state's agricultural heritage and celebrates the abundance of the harvest season. The process of making Til pitha is a communal affair, with families coming together to share in the preparation and cooking of the dish.
Rice Flour: 1 cup Sesame Seeds (Til): 1/2 cup Grated Coconut: 1/2 cup Jaggery: 1/2 cup (adjust to taste) Water: 1 to 1.5 cups Salt: a pinch (optional) Ghee or Butter: for frying and serving
In a mixing bowl, combine rice flour, sesame seeds, grated coconut, jaggery, and salt (if using). Mix well.
Slowly add water to the mixture and stir until it forms a smooth batter without lumps. The consistency should be similar to dosa batter.
Heat a non-stick pan or griddle on medium heat. Grease it with ghee or butter.
Pour a ladleful of the batter onto the pan and spread it in a circular motion to form a thin pancake. Cook until both sides are golden brown.
