These deep-fried cookies are a speciality of Bihar and usually enjoyed during the celebration of Chhath Puja, but make for a tasty snack all year round.
4 cups all-purpose flour 1 cup Sugar 1 tbsp Fennel seeds ½ cup Ghee Cashews, chopped, as required Raisins, chopped, as required Oil/ghee for deep frying
In a bowl, combine the all-purpose flour and ghee, mixing until the flour binds together when pressed into a ball.
Incorporate sugar, fennel seeds, and chopped dry fruits into the mixture, ensuring an even distribution.
Gradually add water to one part of the mixture, kneading it into a medium-soft dough. Be cautious not to dissolve the sugar completely.
Take small portions of the dough and shape them into balls. Flatten each ball on a rolling board to approximately 1/2 inch thickness, placing them on a tray.
Heat oil or ghee in a pan and fry the thekuas over low flame until they achieve a golden brown colour, ensuring thorough cooking.
