Bihari Sannata, A Cooling Raita To Soothe Tummy Troubles

Bihari Sannata Raita is a soothing and flavourful yoghurt-based dish hailing from the state of Bihar, India and is famous throughout Uttar Pradesh.

There are a couple of reasons why people believe it’s called Sannata.  Firstly it’s thought that according to folklore, it can quiet all your stomach issues. But there’s another theory that says it's the sour taste that makes you go quiet for a few seconds after you taste it.

Ingredients

1 cup sour curd 1 cup water ½ teaspoon red chilli powder 1 teaspoon roasted cumin seeds 1 teaspoon hing (asafoetida) ½ teaspoon green chilli, chopped Rock salt (sendha namak) as per taste

Step 1

In a bowl, add yoghurt and water. Mix vigorously until well combined and smooth.

Step 2

Add red chilli powder, roasted cumin seeds, hing (asafoetida), chopped green chilli, and rock salt to the yoghurt-water mixture.

Step 3

Stir well to ensure all the spices are evenly distributed. Taste and adjust the seasoning if needed.

Step 4

Refrigerate for at least 30 minutes to allow the flavours to blend before serving. Garnish with mint or coriander if desired.
