Make this deliciously creamy recipe made by condensing corn puree, flavoured with ginger-garlic, cumin and fresh coriander, to enjoy for a light snack with chai.

1 cup steamed corn ¾ cup milk 3 teaspoons ghee 1-inch piece ginger, grated 4 cloves garlic, minced 4-5 curry leaves 1 teaspoon cumin seeds 2 green chillies, slit 2 teaspoons chopped coriander Salt, to taste

Grind the corn and milk in a blender to a fairly smooth liquid and set aside.

Heat the ghee in a pan and temper the remaining ingredients except the chopped coriander, before pouring in the corn mixture.

Using a spatula, cook the mixture on a low heat continuously for about 10-12 minutes until it starts to separate from the sides and thicken.

Once it deepens in colour, season with salt and turn off the flame.

Sprinkle with coriander and serve immediately.
