Make this mildly sweet, deep-fried pumpkin puris to enjoy on its own with some tea on a rainy day or pair with a spicy curry for a full meal.

2 cups whole wheat flour 1 tablespoon rice flour ¾ cup jaggery 1 cup grated pumpkin 3 teaspoons ghee 1 pinch cardamom powder ¼ teaspoon nutmeg powder Salt, to taste Oil, for deep-frying

Heat the ghee in a pan and sauté the grated pumpkin for 2-3 minutes before letting it steam until soft.

Add salt, nutmeg and cardamom powders and the jaggery to let it melt completely without caramelising.

Cool the mixture and add it to a mixing bowl with the flours, to knead into a stiff dough.

Divide the dough into small portions and roll into small, thin discs before frying in hot oil for a couple of minutes on each side. Eat hot.
