500 gm ladyfingers 500 gm mutton 2 tbsp ghee 1 tsp ghee 1 tsp cumin seeds 2 cinnamons 4 black cardamoms 8 to 10 peppercorns 2 onions (sliced) 3 to 4 green chilies 1 tsp ginger paste 1 tsp garlic paste Salt to taste ½ tsp turmeric powder 1 tsp red chili powder 1 tsp garam masala 2 tsp coriander powder 2 tbsp oil 2 tomatoes (pureed) Handful of coriander leaves
Add ghee in a pressure cooker. Add cumin seeds, cardamoms, peppercorns and onions. Let it sauté until the onions are slightly brown.
Add in mutton and green chilies. Mix well and let it sauté. Add in garlic paste, ginger paste, turmeric powder, coriander powder and salt. Mix well.
Heat another pan and add oil. Add the other portion of cumin seeds. Let the cumin seeds splutter.
Make a slit on one side of the ladyfingers and add them to the pan. Sauté well until the ladyfingers are slightly brown.
Then, add water to the mutton and mix well. Also, add tomato puree and mix well. Add red chili powder and garam masala. Mix well.
Add coriander and cooked ladyfingers. Mix well and close the cooker. Let the mutton cook under pressure until one whistle is released.
Reduce the heat to medium and cook for around 20 to 25 minutes. Open the lid when the pressure reduces. Serve!
