Bharli Vangi: A Traditional Maharashtrian Dish For Dinner

Stuffed with coconut and masalas, this brinjal dish is a gift of Maharashtrian cuisine. Make bharli vangi at home with this simple recipe.

Ingredients

6 aubergines (sliced nto four), 6 tsp desiccated coconut, 4 tsp roasted peanuts, 1 tsp red chilli powder, 1 1/2 tsp goda masala, salt to taste, 4 tsp oil, 1/2 tsp cumin seeds, 1/2 tsp mustard seeds, 2 tsp tamarind extract, 2 tsp jaggery water, 1/2 tsp coriander leaves

Step 1

For The Stuffing: Mix coconut, peanut powder, chilli powder, goda masala and salt together.

Step 2

Insert the stuffing in the aubergines. Heat oil in a pan and add cumin and mustard seeds. Cook the stuffed aubergines in it.

Step 3

Pour water and cook for ten minutes with lid on. Then add tamarind and jaggery water.

Add salt and garnish with coriander leaves and grated coconut. Enjoy with roti or steamed rice.
