Also known as Pineapple Kesari, this is a delicious and aromatic dessert from Karnataka which has a melt-in-your-mouth texture, that'll surely impress everybody on this festive occasion of Bhai Dooj. Here's everything you'd need to make it at home.
1 cup semolina 1 cup pineapple chunks 1 cup sugar 4 tbsp ghee ½ tsp cardamom powder 4-5 saffron strands and cloves 2 cup water 10-12 cashews 2 tbsp raisins
Put a pan on medium heat and add 3 tablespoons of ghee to it. Once hot, add the cashews and raisins and fry them lightly and set aside on a plate.
Add cloves to the ghee and saute for a while followed by roasting the semolina for 2-3 minutes, or until its raw smell goes away. Then take it off the heat.
In a separate pot, add the pineapple chunks and water followed by cardamom powder and saffron.
Once the water comes upto boil, add the roasted semolina to the pot and incorporate thoroughly.
Add sugar to the semolina mixture and stir continuously until it gets thickened. Add a tablespoon of ghee in the end to give it that luxuriant mouthfeel.
Mix the cashews and the raisins with the pineapple sheera and serve warm.
