Crispy vadas made from leftover rice are a delicious snack. They are easy to prepare and a great way to use up leftover rice. Here's a simple recipe for crispy rice vadas.

2 cups leftover cooked rice 1/2 cup besan 2-3 green chillies, chopped 1/2 inch piece of ginger, grated 1 /2cup grated carrot 1/2 cup chopped onions 1/2 teaspoon cumin seeds 10-12 crushed curry leaves A pinch of asafoetida Salt to taste Oil for deep frying

Mash the rice with your hands and mix the grated veggies and spices.

Add the besan to the rice mixture and adjust the consistency to medium thick.

Heat up oil in a deep kadhai and put in the vada batter using spoons.

Deep fry the vadas till goled on both sides. Serve with chutney or ketchup.
