Besan Milk Cake, a delectable Diwali delight, combines the rich flavours of gram flour and milk powder for a festive treat that truly shines during the festival of lights.
6 tbsp Ghee or Brown butter (¼ cup + 2 tbsp) 1 cup Besan or gram flour or chickpea flour ½ cup Milk powder ¼ tsp Cardamom powder ½ cup Sugar ½ cup Water Almonds, chopped
Heat a pan over medium to medium-low heat, add the Ghee and stir in the besan continuously stirring until it becomes aromatic. (5-8 mins)
Add the Milk Powder and Cardamom Powder. Mix them until well combined. Turn off the heat and set this mixture aside.
In another pan, combine the Sugar and Water until it forms a thick one string syrup.
Add the prepared Sugar Syrup to the Besan and Milk Powder mixture. Stir continuously over low heat until it becomes smooth and holds together like a dough.
Transfer the mixture to a greased plate or a tray lined with parchment paper, spreading it evenly to your desired thickness.
Sprinkle chopped Almonds on top and gently press them using the back of a spatula. Allow the mixture to cool for 15 to 20 minutes then cut into shape.
