A Bengali curry loaded with the flavours of cauliflowers, potatoes and peas, this Phulkopir Dalna is a must-have dish for dinner. Here’s the easy-peasy recipe for you to try out.
1 cauliflower, cut into florets 2 potatoes, chopped equal to florets ½ cup fresh peas 3 tomatoes, finely chopped 4 tbsp oil 1 bay leaf 1 dry red chilli ½ tsp asafoetida ½ tsp cumin seeds 1 tbsp ginger paste
1 tsp turmeric powder 1 tsp red chilli powder 1 tsp cumin powder 1 tsp garam masala 1 cup water Salt, to taste 1 tsp sugar 1 tbsp ghee Coriander leaves, for garnish
Heat oil in a large wok and fry the potatoes until brown. Drain and set aside.
Add the cauliflower in the same oil, fry until golden brown, then drain and set aside.

Add bay leaf, dry red chilli, asafoetida and cumin seeds to the oil and let them splutter.
Add the peas, tomatoes, ginger paste, turmeric, red chilli, cumin powder and salt. Saute until tomatoes soften.
Now add the fried cauliflower and potatoes, mix well and adjust the salt and add water. Cover and cook until done.

Sprinkle garam masala, sugar, ghee and adjust the salt. Mix well and serve the Phulkopir Dalna with coriander leaves on top.
