A delicious medley of vegetables, cooked with simple spices and served during the mahabhog during Durga Puja, Labra is a must-have dish from Bengali cuisine. Here’s the easy recipe you can try out now.
½ cup pumpkin, chopped ½ cup potato, chopped ½ cup cauliflower florets ½ cup eggplant, chopped ½ cup broad beans, chopped ½ cup drumsticks, chopped ½ cup coconut paste 2 bay leaves 2 dry red chillies 1 tsp panch phoron ¼ tsp asafoetida
1 tsp turmeric powder 1 tsp cumin powder 1 tsp coriander powder ½ tbsp ginger paste Salt, to taste 1 tsp sugar ½ cup mustard oil ½ cup water 1 tsp Bengali bhaja moshla 1 tsp ghee, for garnish
Heat the oil in a wok and add the bay leaves, red chillies, panch phoron and asafoetida.
Once these stop spluttering, add the potatoes and the other vegetables one by one.

Mix well, then add the powdered spices, salt, ginger paste and continue cooking until the vegetables are half cooked.
Now add the coconut paste, water and cover to cook until the veggies are ready and the water has dried out.

Garnish the Labra with ghee and bhaja moshla, then serve with hot with Khichuri.
