Chicken Kosha is a flavourful Bengali chicken dish with a rich and aromatic gravy. This easy recipe combines succulent chicken pieces with a blend of spices, creating a delicious and satisfying meal. Enjoy the authentic flavours of India in every bite!
500g chicken, cut into pieces 2 onions, finely chopped 2 potatoes, large cubes 2 tomatoes, pureed 2 teaspoons ginger-garlic paste 1 teaspoon turmeric powder 1 teaspoon red chilli powder 1 teaspoon cumin powder 1 teaspoon coriander powder 1 teaspoon garam masala 2 bay leaves 1-inch cinnamon stick 3 dried red chillies Salt to taste 3 tablespoons mustard oil Fresh coriander leaves for garnish
Heat oil in a pan, and fry the potatoes until golden. Keep them aside.
Sauté onions on low heat until golden brown along with bay leaves, dried chillies and cinnamon sticks.
Add ginger-garlic paste, tomatoes, and powdered spices. Cook until oil separates.
Add chicken and coat well. Cook on medium heat until chicken is browned.
Add water, cook potatoes, cover, and simmer until chicken is cooked through.
Garnish with coriander leaves. Serve hot with rice or roti.
