Bengali Bhoger Khichuri is a special dish prepared during Durga Puja as an offering to the goddess. The unique taste comes from the traditional spices and ghee, served with labra mixed vegetable curry and a dollop of tomato chutney.
1 cup Gobindobhog rice ½ cup moong dal 2 tbsp ghee 1 bay leaf 1 tsp cumin seeds 2-3 dry red chillies 1 tsp grated ginger 2 medium potatoes ½ cup cauliflower florets 1 medium tomato ½ cup green peas ½ tsp turmeric powder 1 tsp cumin powder 1 tsp garam masala Salt to taste 4 cups water Fresh coriander leaves
Roast the moong dal in a pan until it turns golden brown.
Rinse the rice and roasted dal well and keep aside.
Heat ghee in a big pan; add bay leaf, cumin seeds and dry red chillies.
Add the cubed potatoes and cauliflower florets. Fry until slightly golden.
Mix in the grated ginger, chopped tomato, turmeric powder, cumin powder and salt.
Add the washed rice and dal to the pan and mix well with the masala.
Add water and green peas, cover and simmer for 20-25 minutes until the rice and dal are cooked.
