Bengali aloo posto is among the popular dry sabzi recipes that are cherished across India. It is a staple in the region and accompanies dal-chawal really well. If you are craving its robust flavour, try this recipe.
300 grams potatoes 3 tbsp poppy seeds 3 green chillies 1 tbsp water ¼ tsp sugar Salt to taste 2 tbsp mustard oil ¼ tsp turmeric powder ½ tsp nigella seeds
Soak poppy seeds overnight and grind them in the morning. Add water and chopped green chillies to them.
Rinse and peel potatoes and keep them submerged in water to prevent their skin from darkening.
Heat mustard oil in a kadhai, and add nigella seeds.
Add chopped potatoes along with turmeric powder and slit green chillies.
Add the poppy seed paste and combine the ingredients nicely. Sprinkle sugar and salt.
Add chopped coriander leaves as garnish before serving with rice and dal.
