Beetroot thoran is a traditional South Indian recipe, particularly in Kerala, that uses grated beets, coconut, curry leaves, and many other spices. It is a simple dish that comes together and is considered very healthy. Here's a recipe for you to try:
2 medium-sized beetroots 1/2 cup grated coconut 1 green chilli 1/2 teaspoon mustard seeds 1/2 teaspoon cumin seeds 2 tablespoons of coconut oil Curry leaves 1 dried red chilly Salt to taste
Sauté mustard seeds, cumin seeds, curry leaves, and dried red chillies in coconut oil.
Add the grated beets and green chilli until cooked.
Add the grated coconut and salt, and simmer for a few more minutes.
Serve it hot alongside rice or as a side dish.
