If you want a quick and healthy recipe to pair with paratha or Malabar parotta, look no further than beetroot thoran. This easy recipe is delicious and won’t take you more than 15 minutes to prepare.
¼ chopped onions 250 grams beetroot Salt to taste 1-2 tbsp coconut oil 1-2 slit green chillies A pinch of turmeric ¼ tsp mustard seeds 7-8 curry leaves 2 garlic cloves ¼ cup grated coconut ½ tsp cumin seeds
Wash the beetroot thoroughly and peel it. Either grate it or chop vertical chunks.
Prepare a coarse paste of green chillies, coconut, garlic, and cumin seeds, and keep it aside.
In a hot kadhai, add oil, mustard seeds, curry leaves, and turmeric powder.
Saute onion until translucent and add the coarse coconut and garlic paste.
Add grated beetroot and salt. Cover the kadhai and let the ingredients cook for 5-8 minutes on a medium flame.
Add grated coconut for garnishing and serve the beetroot thoran with parotta.
