Tired of slurping tomato soup every now and then? Why not try beetroot soup, which has a unique taste and gives your dinner a lovely hint of red? Beetroot soup is not only delicious but healthy and very cooling during humid summers. It is also perfect when mixed with pumpkin in autumn.
2 large beets boiled 1 onion 2 cloves garlic, minced 1 tablespoon olive oil 1 teaspoon cumin seeds 1/2 teaspoon red chilli powder 1/4 teaspoon turmeric powder Salt to taste 4 cups vegetable broth Chopped fresh cilantro for garnish
Heat olive oil in a pot. Add cumin seeds, onion, garlic, cubed beets, red chilli powder, turmeric powder, and salt. Stir well.
Add vegetable broth and simmer for 20-25 minutes. Blend the soup until smooth.
Serve hot, garnished with chopped cilantro.
