2 large beets, boiled 1 onion 2 cloves garlic 1 tablespoon olive oil 1 teaspoon cumin seeds 1/2 teaspoon red chilli powder 1/4 teaspoon turmeric powder Salt to taste 4 cups vegetable broth Cilantro
Heat olive oil in a pot. Add cumin seeds, onion, garlic with boiled cubed beets, red chilli powder, turmeric powder, and salt one by one. Stir well.
Add vegetable broth and simmer for 10 minutes.
Blend the soup until smooth. Adjust consistency with more broth if needed.
Serve hot, garnished with chopped cilantro.
