1 large beetroot 1 small onion or ½ onion 1 sprig of curry leaves 2 dry red chilies 1 tsp mustard seeds 2 green chilies slit 2 tbsp grated coconut ¼ tsp turmeric powder Salt as per taste 1-2 tsp coconut oil

Put the beetroot, onion, green chilies, coconut, curry leaves, turmeric, and salt into a bowl and stir well.

In a pan, heat some coconut oil.

Splutter some mustard seeds in the pan, then add some dry red pepper flakes.

Then, after 2 minutes, add the beetroot mixture and cook. Keep covered and continue cooking, stirring occasionally, for another 5 minutes. The beetroot loses its flavour and texture if overcooked. Serve with hot chapati
