Beetroot Hummus: A Fibre-Rich Dip For Kids To Enjoy

Children love colour – bright, bold and vibrant, even if it is in their food. Combining health with taste and visual appeal, this pink hummus made with the nutrition packed beetroot is creamy and mild in flavour – making it ideal for kids to enjoy with pita bread or vegetable sticks.

INGREDIENTS

2 small beetroot, boiled 1 cup cooked chickpeas 3 cloves garlic 1 tablespoon tahini 1 teaspoon cumin seeds Juice of ¼ lemon 4-5 tablespoons olive oil 1 teaspoon smoked paprika Salt, to taste 3-4 ice cubes

STEP 1

Peel the beetroot and add it to a blender, along with the chickpeas and grind partially.

STEP 2

Add the remaining ingredients and blitz to a smooth paste with a thick consistency.

STEP 3

Add the ice cubes at the end and grind again for a few seconds to make the hummus light and airy.

STEP 4

Transfer to a serving bowl and drizzle some more olive oil on top. Serve with pita or carrot sticks.
