Beetroot curd rice is a delicious and healthy South Indian dish made with yoghurt, rice, and beets. This vibrant pink rice dish gets its beautiful colour from beetroot and is full of nutritious ingredients.
½ cup cooked rice ½ cup plain yoghurt or curd 1 chopped, cooked beetroot 1 chopped green chilli ½ teaspoon chopped ginger 10 curry leaves 1 and ½ teaspoons of mustard seeds ½ cup urad dal 2–3 chopped coriander leaves Salt to taste 1teaspoon Oil
In a pan, heat the oil and add the mustard seeds. Let them splutter.
Add urad dal and let it turn golden brown.
Add green chilies, ginger, and curry leaves. Saute for a minute.
Add chopped beetroot and salt. Cook for 2–3 minutes. Switch off the heat and let the mixture cool completely.
In a large bowl, whisk the curd or yoghurt smoothly. Add the cooked rice and beetroot mixture. Adjust the salt if needed.
Garnish with chopped coriander leaves. Serve chilled or at room temperature. Enjoy!
