Beetroot chutney is not only a delicious condiment but also packed with health benefits, including being rich in antioxidants and vitamins. This vibrant chutney adds a nutritious and flavorful twist to any meal.
2 medium-sized beetroots, peeled and grated 1 medium onion, finely chopped 2-3 garlic cloves, minced 1 small piece of ginger, grated 2 green chillies, chopped 1 tbsp oil 1 tsp mustard seeds 1 tsp cumin seeds A handful of curry leaves 2 tbsp tamarind pulp 1 tbsp jaggery (or brown sugar) Salt to taste
In a pan, heat the oil and add mustard seeds, cumin seeds, and curry leaves. Add the chopped onion, garlic, ginger, and green chillies. Sauté until the onions turn golden brown.
Add the grated beetroot and cook for about 10 minutes until it softens. Stir in the tamarind pulp, jaggery, and salt. Cook for another 5-7 minutes until the mixture thickens.
Allow the mixture to cool slightly, then blend it to a smooth consistency.
