Payasam or kheer is a popular pudding-like Indian dessert made using milk and a variety of ingredients as flavouring agents. This take on the payasam uses beetroot and banana blossoms for a healthy yet nutritious dessert.
1 cup grated beetroot 1 cup chopped banana blossom (boiled and drained) 1 liter milk 1/2 cup sugar 1/4 cup chopped nuts (almonds, cashews, pistachios) 1/4 tsp cardamom powder 1 tbsp ghee
Sauté nuts in ghee until golden, set aside.
Sauté beetroot, add banana blossom, and cook briefly.
Add milk, boil, then simmer until thick.
Add sugar, cardamom, mix well, and simmer.
Cool, garnish with nuts, and serve chilled or at room temperature
