Enjoy Crunchy Rajma Tacos, a delicious fusion dish that combines Mexican with Indian flavours. These tacos have a delightful crunch and a flavorful filling of spicy kidney beans, fresh garnishes, and creamy avocado sauce.
8 crunchy taco shells 2 cups cooked rajma 1 chopped small onion 2 cloves garlic 1 small bell pepper 1 tsp ground cumin 1 tsp chili powder Salt and pepper to taste Optional toppings: Shredded lettuce 1 diced tomato 1/2 sliced avocado, 1/2 cup Sour cream 1/2 salsa
Heat a little oil in a pan. Add the diced onion, minced garlic, and diced bell pepper. Saute well.
Add the cooked rajma (kidney beans) to the pan along with cumin, chili powder, salt, and pepper.
Cook well. Using a masher, mash the rajma beans in the pan to create a slightly chunky texture.
Taste and adjust the seasonings if needed. Warm the taco shells according to the instructions.
Fill each taco shell with a spoonful of the rajma mixture. Top the tacos with your desired toppings.
Add in shredded lettuce, diced tomatoes, sliced avocado, salsa, and sour cream.
Serve the crunchy rajma tacos immediately and enjoy!
