This deliciously orange ice cream made with ripe, frozen tangerines (also called cuties) is an ode to the summer by the beach and bursts with bright, citrusy flavours.
10 tangerines 1 teaspoon vanilla essence 1 tablespoon maple syrup
Peel the tangerines and separate each petal and put them in a box.
Freeze the petals for a minimum of 3 hours before using a knife to remove the seeds or any extra fibre.
Add the frozen tangerines to a food processor along with the vanilla and maple syrup.
Blitz everything together until the tangerines start to release their liquid and turn the mixture into a creamy, fluffy texture.
Serve immediately in ice cream cones or cups, topped off with some grated coconut.
