If you're looking for a vegetarian dish that's simple but addictive, this crispy fried cauliflower slathered in sauce will check all the right boxes. Whether for a party or just for a regular evening dinner, this Bang Bang Cauliflower is sure to wow.

Bang Bang Sauce 120ml mayonnaise 120ml sweet chilli sauce 1 tsp minced garlic 1 tbsp rice vinegar 1 tbsp sriracha (adjust to taste) ½ tsp fresh parsley, finely chopped

1 whole head cauliflower, florets cut off 300ml buttermilk 35g cornstarch 85g all-purpose flour 2 tsp chilli powder 1 tsp garlic powder ½ tsp paprika 1 tsp salt ½ tsp black pepper 35g panko breadcrumbs

In a small bowl, prepare the bang bang sauce by combining mayonnaise, sweet chilli sauce, garlic, rice vinegar, sriracha, and parsley until smooth. Set aside.

Whisk together buttermilk, cornstarch, flour, chilli powder, garlic powder, paprika, salt, and black pepper until a thick batter consistency is achieved.

Add cauliflower florets to the batter, ensuring an even coating. Then add panko breadcrumbs and mix again.

Line a baking sheet with parchment paper and place the battered cauliflower with some space between each floret.

Bake in the oven at 220 C for 20 minutes. Flip over each floret and bake for an additional 15 minutes until golden and crispy.

Once done, remove from the oven. Place the cauliflower in a bowl and add the desired amount of sauce, tossing to coat.
