Banana Batter Waffles: A Vegan Option For Weekend Brunch

Perfect for a lazy Sunday breakfast, these vegan waffles have a tropical flavour from the bananas and coconut milk and fuse the best of both worlds, together.

INGREDIENTS

½ cup all-purpose flour 1 teaspoon baking powder 200 ml coconut milk 1 ripe banana, smashed 1 teaspoon vanilla extract

METHOD

Preheat the waffle iron and brush the pan with some oil or butter.

METHOD

Mash the banana thoroughly in a bowl and add the vanilla extract.

METHOD

Mix together the flour and baking powder in a bowl after sifting, to avoid lumps.

METHOD

Add the coconut milk to the banana mixture and mix well.

METHOD

Combine the wet and dry ingredients, to make a thick batter.

METHOD

Ladle a spoonful or two into the hot waffle iron and cook for 5 minutes.

METHOD

Rest it on a cooling rack for a couple of minutes before serving warm with berries, fruits and syrup.
