Made with ghee, ginger-garlic and a few spices, this Balochi no onion chicken fry is perfect to enjoy on weekends. Here is an easy recipe to make Balochi chicken karahi at home:
1 kg chicken 20-25 green chillies 2 tbsp ginger garlic paste Salt to taste 1 cup ghee 1 tsp black pepper crushed 2 tbsp lemon juice Coriander leaves for garnishing Julienne ginger as required 2-3 tbs tikka karahi masala
Heat ghee in a wok. Add chicken and fry well till it changes colour. Now add chillies and fry again at high flame for 10 mins.
Now take out chicken and chillies from the wok and keep aside. In the remaining ghee add ginger and garlic paste fry for 2 mins. Now add fried chicken, salt and pepper.
Pour 1/4 cup water and cover it for 10 mins on low flame. When the water dries out add the masala and toss only 2-3 times. Then squeeze the lemon juice.
Garnish with coriander leaves and julienne ginger. Serve hot with naan and raita.
