Today is daughter's day and every girl deserves to feel special on this day. If you have not planned anything grand, here is a last minute strawberry cake that you can bake for your "ghar ki lakshmi".

For the cake 1 1/2 cups fresh strawberries, hulled and chopped 2 1/2 cups all-purpose flour 1 1/2 cups granulated sugar 1/2 cup unsalted butter, softened 1/2 cup vegetable oil 1 cup buttermilk 4 large eggs 1 teaspoon vanilla extract 1 teaspoon baking powder 1/2 teaspoon baking soda 1/2 teaspoon salt

For the Strawberry Frosting: 1/2 cup unsalted butter, softened 4 cups powdered sugar 1/4 cup fresh strawberry puree (from the chopped strawberries) 1 teaspoon vanilla extract Pinch of salt

In a blender, puree fresh strawberries until smooth. In a large bowl, cream together softened butter and granulated sugar until light and fluffy.

Beat vegetable oil, eggs, and vanilla extract until well combined. In a separate bowl, whisk maida, baking powder, baking soda, and salt.

Mix the dry and wet ingredients with buttermilk. Fold in the strawberry puree. Pre-heat oven at 175°C , pour the batter in a baking tray and bake for 25-30 minutes.

Prepare the strawberry frosting by beating the softened butter. Add the powdered sugar, strawberry puree, vanilla extract, and a pinch of salt. Beat until smooth and fluffy.

Once the cakes are completely cool, spread a layer of strawberry frosting on top of the cake. Decorate as desired with berries.
