If you love the mouth-melting cheesecakes, why don’t you give it a summer twist by adding mangoes? With a cookie crust and a mango-based filling, here’s how you can bake a mango cheesecake.
For The Crust: 1.5 cups cookie crumbs 1/3 cup butter 2 tablespoons sugar For The Cheesecake Filling: 1 cup cream cheese 1.5 cups pureed mangoes 2 eggs 3/4 cup sugar 1/4 cup heavy cream 1 teaspoon vanilla extract
Make the crust by mixing cookie crumbs, butter, and sugar. Bake for 5 minutes till the crust is set.
Prepare the filling by beating cream cheese, sugar, and eggs with a blender.
Mix in heavy creamy and pureed mangoes till you get a uniform filling.
Pour the filling on the baked crust and bake the cheesecake for about an hour. Let it cool.
Garnish with mango slices and whipped cream and then serve.
