Bajri Na Vada: Traditional Gujarati Fritters Made From Bajra

Ingredients

2 cups bajra flour ½ cup sour curd ½ cup whole wheat flour ⅛ tsp baking soda 1 tbsp sesame seeds, garlic ½ tsp turmeric powder 2-inch grated ginger 1 tbsp jaggery 1/2 cup water 1 tsp red chilli powder, salt ¼ tsp hing 1 tsp cumin, coriander 5 green chillies 2 tbsp oil

Step 1

Mix bajra flour, garlic, ginger, atta, red chilli powder, coriander powder, cumin powder, turmeric powder, salt, sesame seeds, jaggery, oil, and hing.

Step 2

Add baking soda and yoghurt to the mix and knead the ingredients into a soft dough. Use warm water.

Step 3

Divide the dough into small balls and sprinkle sesame seeds on them. Press gently with your fingers.

Step 4

Heat oil in a kadhai and fry the vadas in it.

Step 5

Flip the fritters when the base has turned slightly golden.
