Adding the health benefits of bajra (pearl millet) and the leafy greens of spinach to the classic idli recipe. For people looking for a nutritious and tasty snack or breakfast alternative, this is an easy and delicious choice.

1 cup Bajra flour ½ cup Curd 1 bunch Spinach 1 tsp Cumin seeds Salt - as per taste For tempering A pinch of Hing ¼ tsp Mustard seeds 1 tsp Chana + urad Daal A few Curry leaves 1 tbsp Oil ½ tsp Baking soda or Eno Red bell pepper or Cashews for decoration
Mix Bajra flour with curd. Keep it aside. Boil spinach in salty water for 3-4 mins, then dip in icy water for 2 mins & grind. Mix this spinach puree to Bajra-curd mixture.
Prepare tempering and add it to the batter. Adjust Salt as per taste and add baking soda/Eno. Mix well.
Grease idli stand and pour batter into it. Decorate with red bell pepper or cashew on top. Steam cook for 12-15 mins on high flame. Check with toothpick. Serve hot with Chutney.
