Bajra Dosa: Turn South Indian Staple Into A Millet-Based Delight

Bajra dosa is a healthy twist to the South Indian staple that does not need to be fermented before cooking. You can make it in a jiffy for breakfast or as a snack. Try this recipe and you will never look back.

Ingredients

1.5 tbsp curd ½ tsp hing 2 cups bajra flour 7-8 curry leaves 5 cups water ½ cup rice flour 1 tsp cumin seeds 2 tbsp rava 5 cashews 2 green chillies Oil for cooking 3 tbsp coriander leaves 1 chopped onion

Step 1

Add all the dry ingredients in a deep bowl and stir them together.

Step 2

Pour curd and water into the bowl and combine well to get rid of lumps.

Step 3

Add the spices and curry leaves. Keep the batter aside to ferment for just 15 minutes.

Step 4

Meanwhile, heat a griddle until droplets start sizzling on it when you splash water on the surface.

Step 5

Spread a thin layer of the batter on tawa and let the base cook and turn crispy.

Step 6

Enjoy the bajra dosa with chutney and sambar on the side.
