Baingan Ka Achaar: How To Make This Rare Delicacy

Baingan ka Achaar is a tangy and spicy condiment that pairs well with rice, roti, or any Indian meal.  Here's a simple recipe to make delicious Baingan ka Achaar at home.

Ingredients

2 large cubed baingan 2 tbsp mustard oil 1 tsp mustard seeds 1/2 tsp methi seeds 1/2 tsp cumin seeds 1/4 tsp hing 1/2 tsp turmeric powder 1 tbsp red chili powder 1 tbsp saunf 1 tbsp coriander seeds 1 tbsp grated ginger 1 tbsp grated garlic 2 tbsp vinegar Salt to taste

Step 1

Cut 2 large eggplants into small cubes and sprinkle with salt. After 15 minutes, squeeze out excess water. 

Step 2

Heat mustard oil and turn off heat. Add mustard, fenugreek, cumin seeds, grated ginger, and garlic to the oil. Then, add turmeric, red chili powder & baingan.

Step 3

Mix in ground fennel and coriander seed powder. Let it cool, then add vinegar and salt. 

Step 4

Store the achaar in a glass jar in the refrigerator. Enjoy the tangy and spicy delight with your meals!
