1 kg brinjal (roasted), 3 onions, 1 tsp cumin seeds, 3 tbsp oil, 1 ½ ginger, 2 tsp red chilli powder, salt to taste, 4 tomatoes, coriander leaves for garnishing
Remove skin of brinjals and mash the pulp completely. Heat the oil in a kadai and add the cumin seeds. Cook for 30 seconds and add the onions, ginger and green chillies.
Cook for a minute and add chilli powder and mashed brinjals. Cook for 7 to 8 minutes over medium flame, then add the salt.
Add tomatoes and cook on medium heat till the oil separates. Garnish with the coriander leaves and serve hot.
