Made with an abundance of rich and creamy avocados, vibrant tomatoes, crisp cucumbers, bright red onions and a fresh herb dressing, it's a healthy side that’s perfect for a summer lunch or dinner. It’s easy to throw together, no cooking is required, and it’s an inexpensive side. Especially during summer when all these fruits and veggies are in season. It’s filling and something you can feel great about serving and will easily be a highlight of any meal.

2 Avocados (big and ripe) 3 Cucumbers ¼ Red Onion, chopped Fresh Herbs: Cilantro, Dill etc Chilli Flakes, for taste Lime Juice, dressing Extra Virgin Olive Oil, dressing

Chuck everything into a bowl – avocado, cucumber and red onion first, top with herbs, then drizzle/sprinkle all the dressing ingredients over.

Toss well using your hands, gently separating the avocado and cucumber slices. Tumble into a bowl and serve!
