Coconut rice, or Thengai Sadam is a popular South Indian delicacy that is simple yet flavourful. To whip up a quick meal, you can try this authentic recipe and make yourself a hearty serving of coconut rice.
1 cup rice 1 cup grated coconut 2 tablespoons coconut oil 1 teaspoon mustard seeds 1/2 teaspoon urad dal 1 dried red chilli A few curry leaves 1 green chilli 1/2 inch ginger Salt to taste Chopped cilantro for garnish
Rinse and cook rice using your preferred method.
Heat some oil and add mustard seeds. Once they splutter, add and fry urad dal.
Saute dried red chilli, curry leaves, green chilli, grated ginger, and grated coconut.
Cook till the coconut is slightly brown. Add salt to taste.
Add cooked rice and fold in the coconut mixture.
Garnish with chopped cilantro and serve hot.
