This classic dish includes dhoklas instead of pakodas and offers a unique texture. It is rich in authentic flavours and has an assortment of spices. Try this Rajasthani kadhi dhokla recipe at home.
For Kadhi 1 cup yoghurt 2 tbsp besan water salt as per taste ½ tsp turmeric powder ½ tsp red chilli powder 1 tsp mustard seeds ½ tsp cumin seeds 3 tbsp ghee 2 cloves 1 tsp fenugreek seeds ½ tsp hing red chillies curry leaves
For Tempering 1 tbsp Ghee ½ tsp Red Chilli Powder Garlic
Mix wheat flour, powder, red chilli, turmeric, coriander, and baking.
Add garlic-ginger chilli paste, curry leaves, and coriander leaves.
Knead a dough and keep it aside for 10 minutes.
Divide the dough and shape it.
Steam the dhoklas, brush with ghee, and set aside.
Mix besan, yoghurt, salt, turmeric, and red chilli powder.
Heat oil in a pan; add mustard seeds, cumin seeds, hing, fenugreek seeds, and cloves.
Then add dried chillies, garlic-ginger paste, and curry leaves.
Add besan-yoghurt mixture and water to adjust consistency.
Heat ghee in a small pan; add red chilli powder and garlic.
Add this tempering to Kadhi, and serve.
