Nei Choru, or neychoru, is a traditional Kerala dish made with rice, ghee, spices, and seasonings. ‘Nei’ or ‘ney’ means ‘ghee’ and ‘choru’ means ‘rice’, resulting in a fragrant, savoury dish.
300 grams kaima rice or basmati rice 4 tablespoons ghee 12-15 cashews 1 tablespoon raisins 1 cup thinly sliced onions
Ingredients 1 tej patta Cinnamon 3 green cardamoms 3 cups water Salt as required 1-2 tablespoons coriander leaves (for garnish)
Rinse and soak the rice in water for 20-30 minutes, then drain.
Heat ghee in a pan and fry the sliced onions until crisp and golden. Remove and set aside.
Fry cashews in the same pan until golden, then remove. Fry raisins until they puff up.
Add the remaining sliced onions and sauté until translucent. Add the soaked rice and salt. Mix gently.
Add 3 cups of water and mix. Cover and simmer on low heat until the rice is tender and water is absorbed.
Fluff the cooked rice gently. Garnish with fried onions, cashews, raisins, and coriander leaves. Serve hot.
