Rice kheer is a popular Indian sweet dessert made with basmati rice, sugar, whole milk, nuts, and saffron. This creamy, delicious pudding is simple to make and perfect for any occasion.
¼ cup basmati rice 1 litre whole milk (4 cups) 6 tablespoons sugar (or to taste) ½ tsp. green cardamom powder 1 pinch of saffron strands (14-16 strands) 1 tablespoon chopped almonds 1 tablespoon chopped cashews 1 tablespoon chopped unsalted pistachios 1 tablespoon golden raisins
Rinse basmati rice until water runs clear. Soak the rice in water for 15-20 minutes.
In a heavy pan, bring whole milk to a boil. Add the soaked rice to the boiling milk and cook on low heat.
When rice is half-cooked, add sugar and stir well.
Add cardamom powder, nuts, and saffron-infused milk. Cook until rice is fully cooked and kheer thickens.
Turn off the heat, add golden raisins, and let it cool. Serve hot, warm, or chilled.
