Ingredients

1 large aubergine 1 tablespoon olive oil 1 onion 2 cloves garlic 1 can diced tomatoes 1 cup vegetable broth 1/2 cup grated Parmesan cheese Salt and pepper to taste 500g pasta of your choice 

Step 1

Toss the aubergine cubes with olive oil, salt, and pepper. 

Step 2

 Add onion, garlic, tomatoes and broth to the aubergine.

Step 3

Toss in the cooked pasta.

Step 4

Top with grated Parmesan cheese and serve immediately.
