Atte ka halwa is a rich, aromatic, and comforting Indian dessert made with whole wheat flour, ghee, sugar, and cardamom. Its smooth, melt-in-the-mouth texture and nutty flavour make it a popular choice for festive offerings, prasad, or a warm, homemade sweet treat.

Ingredients

1 cup whole wheat flour (atta) 1 cup ghee (clarified butter) 1 cup sugar 3 cups water

Step 1

In a saucepan, boil 3 cups of water. Add the sugar and stir until it dissolves completely. Lower the heat to keep the syrup warm while you make the halwa.

Step 2

In a heavy-bottomed pan, melt the ghee on medium heat. Add the whole wheat flour and begin roasting, stirring continuously to prevent lumps.

Step 3

Roast for 10-15 minutes until the flour turns a rich golden brown colour and gives off a nutty aroma.

Step 4

Carefully pour the warm sugar syrup into the roasted flour mixture, stirring continuously. The mixture will bubble vigorously, so be cautious. Stir well to combine everything.

Step 5

Continue stirring until the halwa thickens, becomes glossy, and starts leaving the sides of the pan. Serve warm.
