Atta noodles are considered healthy, as are any other form of noodles available on the market. Making it at home can help you customise flavours and ingredients according to our preferences. Here’s how you can make atta noodles at home:
1 cup whole wheat flour (atta) Water, as needed Salt to taste 1 tablespoon of oil.
In a mixing bowl, combine whole wheat flour and a pinch of salt. Gradually add water while kneading to form a smooth and elastic dough. The dough should be firm yet pliable. Then, cover it with a damp cloth and let it rest for about 15–20 minutes.
Divide the dough into small portions. Take one portion and roll it out thinly. The thickness of the dough will determine the thickness of your noodles.
Once the dough is rolled out, with the help of a sharp knife, cut the dough into thin strips to form noodles. You can adjust the width of the noodles.
Boil sufficient water and add oil and a pinch of salt. Drop the noodles into the boiling water and cook for 2–3 minutes, until they are tender but still firm.
Once the noodles are cooked, strain them using a colander and rinse them with cold water to prevent them from sticking together.
